Real matcha is a fresh food. Within weeks of opening it fades from vivid green to dull, and the sweetness turns bitter. A giant bag on a shelf is already past its best by the time you reach the bottom. Koharu is stone ground in small batches and sealed in a tin, so every bowl tastes the way matcha is supposed to.

Sift
Sift 1 tsp, about 3g, into your cup. Sifting is the secret to no clumps.
Add water
Pour 2 oz, 60 mL, of hot water at 175F, 80C. Not boiling, or you scorch it.
Whisk
Whisk briskly in a W or M motion for 20 to 30 seconds, until fine foam forms.
Sip or latte
Drink as is, or add 6 to 8 oz milk. For iced, whisk hot first, then pour over ice.

What it actually tastes like
Ceremonial grade means one ingredient: stone-ground green tea. No sugar, no filler. On its own it's smooth and grassy with a mellow, savory finish — clean, not bitter, no chalk and no sludge at the bottom of the cup. The sweetness comes from what you add. Milk softens it, a spoonful of honey or vanilla syrup turns it into the latte you're picturing. If matcha has ever tasted harsh to you, that was low grade powder, not this.
